Red Wine & Tarragon Sauce for Wellington – Serves 2
Rich red wine sauce with beef jus and tarragon
A rich glossy reduced beef stock and red wine sauce, flavoured with port and tarragon to accompany the Beef Wellington.
Ingredients: beef stock (beef bones, celery, swede, carrot, leek, onion) red wine (sulphites) celery, port, (sulphites) tarragon, carrot, onion, beef trim, cornflour, tomato puree.
Defrost overnight in the fridge
Place the sauce in a saucepan and reheat gently until just simmering, do not boil. Serve with the Beef Wellington.
